Granny’s Germantown Coconut Cookies

Grann’s Germantown Coconut Cookies

1 cup butter or buttery spread
2 cups Sugar
1 1/2 tsps Vanilla
3 X-large eggs or egg substitute
2 cups Unbleached flour
2 tsps Baking soda
2 cups Rolled oats
2 cups Let’s Do…Organic® Shredded Coconut
1 cup Walnuts, chopped

  • Preheat oven to 375ºF.
  • Cream together the butter, sugar, vanilla and eggs.
  • Mix the flour and baking soda into the creamed mixture.
  • Stir in the oats, coconut and walnuts.
  • Drop on cookie sheet.
  • Bake for 8 minutes.
