Organic Coconut Milk Recipe Cool Cucumber Salad

Cool Cucumber Salad

1 lg Cucumber, peeled and thinly sliced
1 Tbsp. Native Forest® Organic Classic Coconut Milk
¼ cup Red wine vinegar
2 tsp. Red Onion, finely chopped
pinch of sugar
salt & pepper (to taste)

  • Spread cucumber slices out on a cookie sheet and sprinkle with salt.
  • Let them sit for about 10 mins.
  • Transfer them to a large bowl and squeeze them dry.
  • To the dry cucumber slices, add vinegar, coconut milk and onion.
  • Stir well and add salt, pepper, and a pinch of sugar.
  • Chill for 30 minutes to serve as a side dish or serve over green salad at room temperature.
