Cool Cucumber Salad
1 lg Cucumber, peeled and thinly sliced
1 Tbsp. Native Forest® Organic Classic Coconut Milk
¼ cup Red wine vinegar
2 tsp. Red Onion, finely chopped
pinch of sugar
salt & pepper (to taste)
- Spread cucumber slices out on a cookie sheet and sprinkle with salt.
- Let them sit for about 10 mins.
- Transfer them to a large bowl and squeeze them dry.
- To the dry cucumber slices, add vinegar, coconut milk and onion.
- Stir well and add salt, pepper, and a pinch of sugar.
- Chill for 30 minutes to serve as a side dish or serve over green salad at room temperature.
