Mini Egg-Free Chickpea Frittatas

The secret ingredient is our brand new Let’s Do Organic Chickpea Flour! It makes light and fluffy frittata muffins that are packed with protein and flavor.

Ingredients
  • 3 tablespoons olive oil, separated⁠
  • 2 1/2 cups chopped vegetables (I used broccoli, bell pepper, green onions, and peas)⁠
  • 2 cups Let’s Do Organic Chickpea Flour⁠
  • 2 tablespoons nutritional yeast⁠
  • 1 teaspoon each salt, garlic powder, and onion powder⁠
  • 1/2 teaspoons each pepper and baking powder⁠
  • 2 1/2 cups water
⁠Directions
  1. Preheat the oven to 350 degrees. Spray a muffin tin with nonstick oil. Set aside.⁠
  2. Heat 1 tablespoon of the oil in a skillet. Add in the veggies and a pinch of salt and pepper. Cook until softened, about 7-10 minutes.
  3. In a large bowl, whisk together all the remaining ingredients except the water. Add in the water an whisk until the mixture is mostly smooth. Add in the veggies and stir once more.⁠
  4. Using a 1/3 cup measure, scoop the batter into the muffin cups. Bake for 30 minutes.
