Andrew’s Potato Latkes
- 2 large potatoes
- 1 onion
- 1/3 cup Let’s Do…Organic® Coconut Flour
- Egg replacer for 1 egg
- Salt & Pepper (to Taste)
- Oil for fry pan (I used olive oil & canola)
To Taste Optional:
- Chopped Garlic
- The Wizard’s® Hot Stuff
• With a box shredder or food processor, shred the potatoes & onion.
• In a large bowl, mix the shredded potatoes & onions (this is where I put in garlic & hot stuff).
• Sprinkle Let’s Do Organic® Coconut Flour over the mixture & add the egg replacer.
• Mix well (mixture should hold together a little when squeezed)
• Pre-heat a fry pan with a little oil on medium high
• Place small lumps of the mixture in fry pan and fry on each side until golden brown (about 2-3 minutes each side)
