French Coconut Pie
1 cup Sugar
1 Tbsp Flour
2 eggs or egg substitute, slightly beaten
½ cup milk – dairy or non-dairy
½ stick butter or buttery spread, melted
1 tsp Vanilla
1 cup Let’s Do…Organic® Shredded Coconut
½ tsp Sea salt
1 Pastry crust, uncooked
- Preheat oven to 400º.
- Mix all ingredients & pour into unbaked pastry crust.
- Bake for 10 minutes, reduce heat to 350º and bake for another 30 minutes or until browned.
- (Note: this pie freezes well.)
