Ingredients⁠⠀
  • 2/3 cup Let’s Do Organic Coconut Flour⁠
  • 2 cups oat flour⁠
  • 2/3 cup tapioca flour (plus more for rolling out dough)⁠
  • 2 tsp baking soda⁠
  • 1/3 cup vegan butter (cold, cut into cubes)⁠
  • 1/4 cup coconut sugar⁠
  • 1 flax egg (1 Tbsp ground flax meal + 2 Tbsp water)⁠
  • 2/3 cup Native Forest Lite Coconut Milk⁠
  • 1 tsp vanilla⁠
  • 1 Tbsp orange zest⁠
  • 2 Tbsp orange juice⁠
  • 1/3 cup coconut butter (melted)⁠⠀
Directions⁠
  1. Preheat oven to 400 F. In a bowl, mix together the coconut flour, oat flour, tapioca flour, and baking soda; set aside⁠.
  2. In a separate bowl, beat the vegan butter, coconut sugar, flax egg, coconut milk, orange zest, and orange juice until well combined⁠.
  3. Slowly fold in the flour mixture into the bowl with the coconut milk until a large ball of dough begins to form⁠.
  4. Transfer dough to a lightly floured surface, knead a few times, then form into a large circular disk⁠.
  5. Cut the dough into 16 triangles by slicing vertically and horizontally, then 2 more diagonal cuts⁠.
  6. Carefully pull the triangles about 2 inches apart on parchment paper and bake for 10 – 14 minutes until the edges turn golden brown⁠.
  7. Drizzle with melted coconut butter and top with extra orange zest if desired.
