Vegan Jackfruit Poutine

Prepare for your mind to be blown with this Vegan Jackfruit Poutine! If you’ve never heard of poutine before, it’s a traditional Canadian dish that contains french fries smothered in cheese curds and gravy. This healthy version of Vegan Jackfruit Poutine is made with Edward & Sons Organic Unseasoned Jackfruit Pieces by @themindfulhapa

Ingredients:
Vegan Mushroom Gravy⁠
  • 1 medium onion (~1 cup), diced⁠
  • 1 8oz pack mushrooms, sliced⁠
  • 3 cloves garlic, minced⁠
  • 3 tbsp olive oil
  • 1 tbsp nutritional yeast⁠
  • ½ tsp salt⁠
  • ½ cup soaked cashews⁠
  • ¾ cup vegetable broth
  • 2 tbsp lemon juice⁠
Vegan Poutine
Instructions:
  1. ⁠ Preheat oven to 400F and line 2 baking trays with parchment paper.⁠
  2. To a large bowl, add first 6 ingredients (diced onions – salt)⁠
  3. Stir until evenly coated + spread in a single layer on your baking tray. Bake for ~25-35 minutes or until everything starts to brown.⁠
  4. In same bowl, add potato slices & coat with ¼ cup olive oil, plus s&p. Spread evenly (this ensures they get crispy) on second baking tray. Bake at 400F for 35-45 minutes or until browned.
  5. Meanwhile, add the soaked cashews, veg broth, and lemon juice to a high speed blender. Once the mushroom/onion/garlic mixture has finished baking, add to the blender along with the above ingredients. Blend on medium to medium high for 3-5 minutes or until smooth.
  6. Heat a medium-sized saucepan to medium heat and add olive oil/chopped onion. Cook until onions are translucent.⁠
  7. Add your Edward & Sons Unseasoned Jackfruit Pieces and cook for 1-2 minutes. Add ¾ cup vegetable broth and let simmer for 5-10 minutes.
  8. Add your mushroom gravy to onion/jackfruit mixture and stir to combine. ⁠
  9. Assemble your vegan poutine – to an oven-safe casserole pan, add your baked potatoes, and top with vegan mushroom gravy.
  10. Add shredded vegan mozzarella cheese on top and broil for 2-3 minutes.
  11. Top with extra gravy and chopped fresh parsley.

Hello, I just bought a can of the jack fruit to try, the recipe here looks great! I fear that my local shoprite won’t be carrying the cans once they are gone though. I was wondering if Jack fruit can be found in a freezer isle or when it comes to our stores (hopefully in November), if I can freeze the fresh ones, in pieces? I’m not real thrilled with canned foods, but frozen I’m good with. Thanks.. Linda
