Ready for a fuss-free pumpkin pie recipe?

Swap out your traditional pumpkin pie with these vegan pumpkin pie bars.

No super fussy pie crust, but the same traditional yummy flavor, perfect for Thanksgiving!

This recipe is vegan, gluten-free, and grain-free.

Made with Let’s Do Organic Tapioca Starch and Let’s Do Organic Coconut Flour.

To make the filling, simply at all the ingredients into a blender and blend until smooth.

The filling is made dairy-free with Let’s Do Organic Tapioca Starch, pumpkin puree, and coconut sugar.

Let’s Do Organic Tapioca Starch acts as a binder to the make pie filling.

After baking, pop the bars in the fridge to let set overnight.

Then dollop with a generous layer of coconut whipped cream and enjoy!

Vegan Pumpkin Pie Bars

Ingredients

  • 1 1/4 cup almond flour
  • 1/4 cup Let's Do Organic Coconut Flour
  • 1/3 cup almond butter
  • 3 tbsp maple syrup
  • 1/8 tsp salt
  • 15 oz can pumpkin puree
  • 1/2 cup coconut sugar
  • 3 tbsp Let's Do Organic Tapioca Starch
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F.
  • Combine crust ingredients (almond flour, coconut flour, almond butter, maple syrup, salt) and mix with a fork until crumbly.
  • Press into a lined 8x8” pan. Bake for 10-12 minutes at 350°F until lightly browned around the edges. Set aside
  • Blend filling ingredients.
  • Pour on top of the crust and smooth with a spatula.
  • Bake for 30-35 minutes at 350°F. The center should not be jiggly at all when it’s done.
  • Cool, then chill overnight.
  • Slice, top with coconut whipped cream, and enjoy!

Sounds good. But you mention “The filling is made dairy-free with Native Forest Organic Classic Coconut Milk”, yet no milk shows in the recipe.

    Sorry about that! It’s been fixed. The coconut milk is part of the coconut whipped cream, but isn’t part of the filling. Thanks for catching it!

It looks yummy. However, you refer to “combining crust ingredients…” without separating the crust ingredients from other ingredients.
