Vegan Salted Caramel & Chocolate Pops

These deliciously creamy ice cream pops are vegan & refined sugar-free and only made with a  few simple ingredients!

The perfect treat on a warm summer day or any occasion!

Take these babies up a notch with a serious amount of caramel and chocolate drizzle!

Vegan Salted Caramel⁠
Popsicle Ingredients⁠
  1. First, make the caramel. Add the coconut milk, coconut sugar, and vanilla to a small saucepan and bring to a boil. Reduce the heat and simmer the caramel for 35-40 minutes until the caramel is dark brown in color and vigorously bubbling. Make sure to stir frequently while cooking.⁠
  2. Remove the caramel from the heat and mix in 1 tsp salt. Let the caramel cool completely, then pour into a container & add to the fridge to thicken for at least 3 hours or ideally overnight.⁠
  3. Add the coconut cream and maple syrup to a small bowl and whisk until smooth. Then, add 1 Tbsp of the coconut cream mixture to each popsicle mold. ⁠
  4. Next, layer 1 tsp of salted caramel and a few chocolate chips to each popsicle mold. Use a popsicle stick to slightly mix the ingredients together. Continue layering each mold with these measurements until all the ingredients have been used, making sure to stir slightly as you go. If you have leftover caramel sauce, save it to drizzle over the finished popsicles.⁠
  5. Once the popsicle molds are full, add in the popsicle sticks and place the molds in the freezer for at least 6 hours or overnight.  Gently remove the popsicles from the mold and enjoy right out of the freezer!
