Vegan TikTok Pancake Cereal
If you haven’t seen the new pancake cereal trend taking social media by storm, let us introduce you.
Cereal and pancakes are both equally everyones favorite breakfast, so why not combine the two?
The TikTok Cereal trend is basically just tons of mini pancakes served like a bowl of cereal!
We’ve veganized the popular recipe and made it vegan and gluten-free! Thanks to Let’s Do Organic Cassava Flour.
Cassava Flour is a perfect 1:1 flour substitute, and we will make the “buttermilk” pancake batter with a slurry of almond milk and apple cider vinegar.

  1. In small bowl, whisk almond milk and apple cider vinegar to create a “buttermilk” you should start to see tiny bubbles. Let the mixture sit for 10 minutes.
  2. While waiting for the buttermilk mixture, in a large mixing bowl stir cassava flour, tapioca starch and baking powder.
  3. Once the buttermilk has sat for over 10 minutes, combine the rest of the wet ingredients including the almond butter, banana and maple syrup.
  4. Pour the wet ingredients into the dry ingredients and mix until no lumps remain. Transfer to a blender if needed.
  5. Preheat your non-stick pan for at least 10 minutes and dot 1/2 tsp of batter at a time. Cook on low heat, once bubbles begin to appear gently flip and let it sit. If you cook them too long the will lose their fluffiness, so play around with timing for your ideal texture.
