This recipe can be made vegan, dairy-free and gluten-free by using gluten-free bread and vegan cheese! ⁠

Instructions:⁠

  1. Preheat oven to 350F. Line a baking sheet with aluminum foil.
  2. Heat oil in a large soup pot. Add onions and cook over medium heat for 20 minutes until softened, stirring frequently.
  3. Add remaining ingredients, except bread and cheese. Simmer for 20 minutes.
  4. If desired, shred cheese and toast bread.
  5. Place 4-6 oven proof bowls on the baking sheet and ladle soup into the bowls.
  6. Place bread on top of soup and sprinkle with cheese.
  7. Bake for 10 minutes. Broil for 1-2 minutes and then serve immediately! Enjoy!
