Ingredients:

  • 2 cans Native Forest Organic Young Jackfruit
  • vegan naan or pita bread
  • tomato slices
  • red onion, sliced
  • cucumber, sliced
  • vegan tzatziki
  • vegan feta cheese
  • black olives, sliced
  • spring mix lettuce
  • Mediterranean seasoning

Mediterranean Seasoning:

  • 2 tsp garlic powder
  • 1 tsp dried dill
  • 2 tsp dried basil
  • 1 1/2 tsp salt
  • 2 tsp black pepper
  • 2 tsp oregano
  • 1 tsp dried thyme
  • 2 tsp parsley
  • 1 tsp onion powder
  • 1 tsp marjoram
  • 2 tsp paprika

Instructions:

  1. Preheat your oven to 350°F.
  2. Start by making your spice mixture. Toss together all your spice ingredients into a small dish until combined.
  3. Drain jackfruit and place into a large mixing bowl. Take 1 1/2 tbsps and sprinkle mixture over your jackfruit and lightly stir to coat.
  4. Place your jackfruit in the oven for 45 mins. Once cooked remove and shred the jackfruit with 2 forks. Place your oven on broil and place back in the oven for about 1-2 mins. Keep an eye out that it chars and doesn’t burn. Remove and set aside.
  5. Now it’s time to prepare all your other ingredients and start building your pita. Warm your vegan naan bread on a pan or in the microwave until just softened.
  6. Top your pita with vegan tzatziki, spring mix, seasoned jackfruit, more tzatziki, lettuce, tomatoes, cucumber, red onion, black olives, vegan feta and another little sprinkle of the Mediterranean spice mixture.
  7. Wrap your pita up in parchment paper and enjoy!
