Vegan Chocolate Chip Banana Flour Pumpkin Bread

Delicious pumpkin bread made gluten-free and vegan with green banana flour.

Ingredients

  • 1.5 cups Let’s Do Organic Green Banana Flour
  • 1/2 cup coconut sugar
  • 1-1.5 tbsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1 15 oz can pumpkin puree
  • 1/3 cup Native Forest Organic Classic Coconut Milk
  • 1/3 cup Native Forest Organic Coconut Oil melted and cooled
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • chocolate chips optional

Instructions

  • Preheat the oven to 350F. Place parchment paper in a loaf pan or use spray/cooking oil.
  • In a large bowl, combine the dry ingredients: banana flour, coconut sugar, pumpkin pie spice, baking powder, baking soda, and sea salt. Whisk well.
  • In another bowl, whisk the wet ingredients until well combined: pumpkin puree, coconut milk , melted coconut oil, maple syrup, and vanilla extract. 
  • Then combine the wet ingredients with the dry until the batter is thick and well combined. Don’t overmix. Let the batter sit for a few minutes and fold in chocolate chips or nuts at this point if you’d like. 
  • Pour the batter into the loaf pan and spread even. Place more chocolate chips on the top and bake for 45-55 minutes. Let the loaf cool on a rack and enjoy!
