Makes: 10 pancakes ⠀⠀⁠⠀

Ingredients:⠀
  • 1 1/4 cup packed Let’s Do Organic Cassava Flour⁠
  • 1/4 cup cacao powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 2 eggs or equivalent of a vegan egg substitute
  • 1 cup plant based milk
  • 3 tablespoons maple syrup
  • 2 tablespoons avocado oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • avocado or coconut oil for cooking⠀⠀⁠⠀

Instructions:⠀⠀⁠⠀
⠀⠀⁠⠀
  1. Grab 2 large bowls. In one bowl whisk together the dry ingredients – cassava flour, cacao powder, baking soda, and sea salt.
  2. In the second bowl, whisk together wet ingredients until well combined – eggs or substitute, plant based milk, maple syrup, avocado oil or melted coconut oil, and vanilla extract.
  3. Add wet ingredients to dry ingredients and whisk until no lumps remain.
  4. Heat about 1 tablespoon cooking oil of choice in a large skillet over medium heat.
  5. Once oil is nice and hot, pour about 1/4 cup batter into the pan at a time. Cook until bubbles begin to pop on the surface of the pancake and edges are dry. Flip carefully, and cook another minute or so on the other side. Repeat until all the batter is gone.
  6. Serve with your favorite fruit and a drizzle of maple syrup. DIG IN & enjoy!⁠⠀
