No Bake Pumpkin Cheesecake Cups⠀⁠⠀
⠀⁠⠀
Makes 4 servings⠀⁠⠀
⠀⁠⠀
Ingredients:
  • 1 15 ounce can pumpkin puree
  • 1 8 oz container dairy free cream cheese
  • 1/3 cup maple syrup
  • 1/3 cup melted Native Forest Organic Virgin Coconut Oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract⠀⁠⠀
⠀⁠⠀
To serve:⠀
  • ⁠Coconut whipped cream
  • Chopped pecans⠀⁠⠀
⠀⁠⠀
Instructions
  1. Add all ingredients except whipped cream and pecans to a blender or food processor and process until smooth.
  2. Pour into individual serving cups or one large glass container and refrigerate overnight, or for at least 4 hours, until thick and fluffy.
  3. Serve topped with whipped cream and chopped pecans and enjoy!
