Puffy Glazed Lemon Cookies (Vegan & Gluten-Free)⁠⠀

Ingredients
  • 1/3 cup (90g) coconut butter⁠
  • 1/3 cup (105g) agave (or honey/maple syrup)⁠
  • 1/2 cup (75g) Let’s Do Organic® Cassava Flour⁠
  • 1/2 tsp baking soda⁠
  • 1 tsp baking powder⁠
  • 2 tbsp (20g) lemon juice⁠
  • 1 tbsp lemon zest⁠
  • 1/8 tsp salt⁠⠀
Glaze⁠⠀
  • 1/2 cup (60g) powdered sugar
  • 1-2 tbsp lemon juice⁠⠀
Instructions
  1. Preheat the oven to 350ºF⁠
  2. Melt the coconut butter and agave. ⁠
  3. Whisk in the lemon juice until no lumps remain. ⁠
  4. Add the cassava flour, baking soda, baking powder, lemon zest, and salt.⁠
  5. Stir to combine.
  6. Scoop about 2 tbsp of dough and roll into a ball. Arrange on a baking sheet, and press to just slightly flatten.⁠
  7. Bake for 8-10 minutes at 350ºF until golden brown.⁠
  8. Enjoy warm, or cool before glazing.⁠
  9. Whisk together the powdered sugar and lemon juice to make a thick but drizzle-able glaze. ⁠
  10. Glaze cooled cookies, refrigerate until set. Enjoy!⁠⠀
