Vegan Chia Pudding Jars

This creamy chia pudding recipe is loaded with healthy fats from coconut and chia seeds, and filled with antioxidants from acai.

Made with Native Forest® Coconut Milk and Let’s Do Organic® Coconut Flakes by Hailey Cherry of Edibly Vegan

 

Chia Pudding Ingredients:
  • 1/4 Chia Seeds
  • 1 Cup Native Forest® Coconut Milk
  • Cinnamon to taste
  • Liquid Sweeter (Maple Syrup or Agave)
  • 1 Mashed Banana (optional)
  • Spirulina (for green color)
  • Beet Powder (for pink color)
Acai Nice Cream Ingredients:
  • 1 Acai acai packet
  • 1-2 Frozen Bananas
  • Coconut Milk to blend
Toppings:
  • Let’s Do Organic® Coconut Flakes
  • Buckwheat
  • White Chia Seeds
Directions:
Stir 1/4 cup of chia seeds mixed with 1 cup of Native Forest® Coconut Milk, ground cinnamon, and a few drops of liquid sweetener. Adding a mashed banana is optional but highly recommended! The green pudding was achieved with a little spirulina stirred in, and the pink is colored with beet powder. To make the acai nice cream layer blend up an acai packet  with frozen bananas, buckwheat, and just enough coconut milk to get the blend. Top with Let’s Do Organic® Coconut Flakes, buckwheat, and white chia seeds.
