Ingredients
  • 1 flax egg (1 tbsp flax + 3 tbsp warm water)⁠
  • 1/2 cup (125g) almond butter⁠
  • 2/3 cup (105g) coconut sugar⁠
  • 1/4 cup (60g) almond milk⁠
  • 1 tsp vanilla extract⁠
  • 1 cup (140g) Let’s Do Organic Sweet Potato Flour⁠
  • 1 tsp baking powder⁠
  • 1 tsp cinnamon⁠
  • 1/4 tsp salt⁠
  • 1/3 cup (40g) chopped walnuts⁠
  • 1/3 cup (50g) chocolate chips⁠⠀

Instructions
  • Preheat the oven to 350ºF.⁠
  • Prepare the flax egg and set aside to gel.⁠
  • Whisk together the almond butter, coconut sugar, flax egg, almond milk, and vanilla.⁠
  • Add the sweet potato flour, baking powder, cinnamon, and salt. Stir to combine.⁠
  • Fold in the chocolate chips and walnuts.⁠
  • Spread batter into a greased loaf pan, smoothing the top (and maybe adding a few extra chocolate chips!)⁠
  • Bake for 20-25 minutes at 350ºF until edges are lightly browned.⁠
  • Cool, then slice and eat!
