Vegan Gingerbread Cake Bars

Made with Native Forest Organic Simple Coconut Milk and Let’s Do Organic Cornstarch by @sunnyrecipes

These vegan gingerbread cake bars are incredibly moist and soft with gingerbread spice flavor and topped with delicious coconut cream icing!

Ingredients:

dry ingredients:

  • 1 cup oat flour
  • 1 cup flour (use gluten-free all purpose flour if gf)
  • 1 tbsp ginger
  • 1 tsp cinnamon, nutmeg, allspice
  • 1 tbsp Let’s Do Organic cornstarch
  • 1 tsp baking powder & baking soda

wet ingredients:

  • 1/2 cup applesauce
  • 1/4 cup melted coconut oil
  • 2 tbsp molasses
  • 1/3 cup brown sugar
  • 1/2 tbsp vanilla extract
  • 3/4 cup milk (we used almond milk)

frosting:

Directions:

  1. preheat oven to 350F
  2. mix all the dry ingredients together
  3. mix in the wet ingredients
  4. stir until it forms a smooth consistency
  5. bake for 50-55 min
  6. in the meantime make the frosting
  7. enjoy!!
