Coconut Peaks

¾ cup Cold mashed potatoes
4 cups Confectionary sugar
4 cups Let’s Do…Organic® Shredded Coconut
1 ½ tsp Vanilla
1/8 tsp Salt
8-10 squares Semi-sweet chocolate

  • Mix above ingredients until well blended.
  • Form into small peaks (about a tablespoon each) and let them air dry on wax paper for about an hour or two until firm & dry.
  • Melt 8 to 10 squares of semi-sweet chocolate and dip the base of each peak into the melted chocolate, placing on waxed paper until hardened.
  • Or use a cookie scoop to make small round mounds and dip the entire mound in chocolate.
  • Store in refrigerator.
