Ingredients
  • 3/4 cup Let’s Do Organic Cassava Flour
  • 3 cups rolled oats
  • 1/3 cup nut butter
  • 1/2 cup coconut oil (melted, then cooled)
  • 1/3 cup honey (sub maple syrup to make vegan)
  • 1/4 cup sea salt
  • 1 Tbsp cold water, if needed⠀
For the filling⠀
  • 1 cup strawberries
  • 1 Tbsp honey⠀
Directions⠀
  1. Preheat oven to 350 F
  2. In a food processor, add the Let’s Do Organic Cassava Flour, rolled oats, nut butter, coconut oil, honey, and sea salt; pulse until mixture begins to stick together. If the mixture is too dry, add cold water 1 Tbsp at a time while pulsing until it comes together.
  3. Reserve 1 cup of the oat mixture for the top, press the remaining dough into the bottom of a lined 8×8 pan with your hands.
  4. Bake the dough for 10 minutes in the oven.
  5. While the dough is pre-baking, make the filling by heating the strawberries and honey in a skillet over medium-low heat until soft; transfer mixture to a blender and blend until desired consistency.
  6. Spread the strawberry filling over top of the crust, crumple the remaining dough over top and bake for another 15 – 20 minutes until the crumble on top turns a darker color.
  7. Let cool for 10 minutes before cutting into pieces.
  8. Enjoy!
