Vegan Caramel Apple Magic Bars

These magic cookie bars (AKA 7 layer bars) are infused with the gooey delicious combination of apples, caramel, and fall spice!

With a gluten-free crispy maple crust, gooey dairy-free filling made with Let’s Do Organic Sweetened Condensed Coconut Milk!

These bars are loaded with apple butter, and all the textures/flavors of apples, walnuts, coconut, and chocolate chips layered in.

These bars are so fun for holidays and are made vegan and gluten-free for all to enjoy!

To make these fall bars, we’re going to use a food processor to blend rice cereal to fine crumbs. Add the remaining crust ingredients and process to a wet sand texture.

We’re going to press the dough firmly into the baking pan, and bake 15 minutes until just golden brown.

Then we’ll whisk together the sweetened condensed coconut milk, apple butter, vanilla, and spice.

Finally we’ll layer these bars with chopped apples > chocolate chips > walnuts > shredded coconut and then pour the apple butter/milk mixture over top. Once baked we’ll top with homemade caramel!

Apple Pie Magic Cookie Bars

Crust

  • 4 cups (100g) crispy rice cereal
  • 2 tbsp (40g) maple syrup
  • 1/4 cup (65g) nut/seed butter
  • 2 tbsp (25g) coconut oil
  • 1 tsp apple pie spice (cinnamon, nutmeg, allspice)
  • 1/4 tsp salt

Bars

Caramel

  • 1 tbsp (12g) coconut oil, melted
  • 2 tbsp (40g) maple syrup
  • 2 tbsp (32g) nut/seed butter
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F. Line an 8×8” pan with parchment paper.
  2. In a food processor, blend the cereal to fine crumbs. Add the remaining crust ingredients and process to a wet sand texture.
  3. Press firmly into the baking pan, and bake 15 minutes until just golden brown. Set aside to cool.
  4. In a bowl, whisk together the sweetened condensed coconut milk, apple butter, vanilla, and spice.
  5. Once the crust is cool to the touch, layer apples > chocolate chips > walnuts > coconut in. Pour the apple butter/milk mixture over top and shake/press so it soaks down through all those layers.
  6. Bake 30-35 minutes until golden around the edges and no longer wet/jiggly.
  7. Cool, then refrigerate overnight.
  8. Whisk together caramel ingredients, drizzle on top of the bars, slice and serve.
