Vegan Grain-Free Snowball Cookies

We’ve made everyone’s favorite snowball cookie both vegan and grain-free!
It doesn’t need to be snowing outside to enjoy a snowball cookie!
A delightful little bundle of sugar and spice and nuts in one buttery cookie bite.
These delicious puffy powdery snowball cookies come together with Let’s Do Organic Cassava Flour!
Simply cream the vegan butter, powdered sugar, and vanilla together. Combine the flours and fold in toasted pecans!
Vegan Grain-Free Snowball Cookies
Ingredients:
- 1 cup (227g) vegan butter
- 2/3 cup (85g) powdered sugar
- 2 tsp vanilla extract
- 1 cup (120g) Let’s Do Organic Cassava Flour
- 2 tbsp (15g) Let’s Do Organic Coconut Flour
- 3/4 cup (80g) toasted pecans, chopped
- 1/4 tsp salt
- Optional: pinch of cinnamon and cardamom
Instructions:
Cream together butter, powdered sugar, and vanilla with a hand mixer until creamy and fluffy (1-2 minutes). Add flours, salt, spices, and pecans. Mix again until everything is combined and no lumps remain. Chill 30 minutes. Scoop/roll into balls (about 2 tbsp per cookie) and arrange on a baking sheet lined with parchment paper. Bake 13-15 minutes at 350°F until starting to brown on the bottom edges. Cool 10 minutes on the pan, then transfer to a cooling rack to cool completely. Toss cooled cookies in more powdered sugar to coat. Enjoy!
